They wanted to create a top-notch local peanut butter, that is healthy, sustainable, and tastes great. 
They batch roast the peanuts, then chuck them straight into the grinder, making the freshest tasting peanut butter possible.  
Bay Road uses only use hi-oleic peanuts, that have a high level of the good monounsaturated fats that regulate cholesterol.

Hi-oleic peanuts have a higher level of monounsaturated fat — the same good fat found in olive oil — and less polyunsaturated fat than standard peanuts. This helps support healthy cholesterol levels and also makes the peanut butter more stable and less prone to oxidising.
