It's hand-harvested using sun and evaporation from the mineral-rich waters of Opito Bay, on the Coromandel Peninsula — no boiling or refining, just sunshine and patience.
Because it's a coarser, flakier crystal than fine table salt, start with a little less than you'd normally use and adjust to taste — the flavour is more pronounced per pinch.
Most of our flavoured blends are best used as a finishing salt — sprinkled on just before serving to preserve the aroma and texture — while our Natural sea salt works well both during cooking and as a finishing touch.
Keep the jar sealed in a cool, dry place, away from direct moisture or steam, so the crystals stay dry and free-flowing.
No — salt doesn't spoil. The only thing to watch is that flavoured blends with add-ins like herbs, mushroom or truffle are best used within about 12 months for the most vibrant aroma, though they'll remain safe well beyond that.
